During his latest royal visit to Australia, King Charles III received a uniquely Aussie treat that might just become a new favourite—kangaroo jerky!

This delightful moment happened thanks to Christian Gilles, the owner of Bondi Smokehouse, who took the opportunity to craft a special edition of kangaroo jerky with native lemon myrtle, just for the King’s visit.

Gilles was thrilled to present his creation directly to King Charles at St Thomas’ Anglican Church in North Sydney. It was the King’s first official duty on this short tour, which made the gift even more special. Never in his wildest dreams did Gilles imagine he’d be handing over his creation to royalty in person. He even wrapped an extra packet in a red bow for Queen Camilla, ensuring no royal bickering over sharing!

For Gilles, who is also a photographer, meeting King Charles was a career highlight. He’s rubbed shoulders with the likes of Prince Harry and Meghan Markle, but this moment topped them all. With his six-year-old son perched on his shoulders, Gilles experienced a genuine, phone-free chat with the King—a memory he’ll cherish forever.
